Grilled Sweet Potato Tart | 甜薯燒

Lovely grilled sweet potato tart, can you resist?

Ingredients | 材料 :
  • Yield: 6-8 tarts | 6-8個
400g steamed sweet potato, peeled | 蒸熟甜薯肉
  20g unsalted butter | 無鹽牛油
  20g granulated sugar | 砂糖
  1/8 teaspoon salt | 鹽
      1 tablespoon whipping cream | 忌廉
      1 tablespoon whole milk | 全脂奶
      1 piece egg yolk | 蛋黃1只
      1 teaspoon rum (optional) | 蘭娒酒(可選)

(B) Topping | 撻面 :
12-16 pieces pine nuts | 松子仁
thin egg glazing on top

Steps | 做法 :

  1. Preheat oven to 220°C.
  2. Whisk milk, whipping cream, egg yolk, salt, granulated sugar, and rum (optional), set egg solution aside.
  3. Steam sweet potato, unpeeled, smashed with butter, add above egg solution when it is hot.
  4. Put potato puree into a piping bag, pipe into aluminum dishes.
  5. Egg glazing thinly on top of puree, put 2 pieces of pine nuts on top.
  6. Put in preheated oven and adjust to 200°C, bake for about 20 minutes.
  7. Serve

Tips / 心得 :
  • Add more milk and whipping cream as needed
