Vietnamese Style Chicken Wings | 越式雞翼


Crispy and delicious Vietnamese style wings!!


Ingredients | 材料 :
  • Yield: 4 servings | 4人份

(A)
12 mid-joint chicken wings | 雞中翼 12只
3 tbsp grated garlic | 蒜蓉 3湯匙
20g  Salted butter | 有鹽牛油
Little olive oil | 橄欖油小許, 下鑊用

(B) Marinade ingredients|醃料 :
1 tbsp Lime juice | 青檸汁 1湯匙
2~3 tbsp Fish sauce | 魚露 2~3湯匙
1 tbsp  Light muscovado (or brown sugar) | 原蔗黑糖 1湯匙
little ground pepper | 胡椒粉  少許


Steps | 做法 :

  1. 雞翼解凍洗淨,用廚房紙擦乾。醃4小時。
  2. 用廚房紙擦乾雞翼,輕輕撲上生粉。
  3. 燒紅鑊,下小許橄欖油,放入雞翼煎至兩面金黃至熟透(用蓋子蓋著,撈起,用廚房紙擦去多餘油份。
  4. 小火煮溶牛油,爆香蒜蓉雞翼回鑊快手兜勻。伴青檸汁食用有助去除油膩。

  1. Defrost and rinse wings, pat dry with kitchen paper. Marinate for 4 hours before cooking.
  2. Coat wings lightly with corn starch.
  3. Brush some olive oil on a pan and fry both sides, with lid on, until cooked. Set aside.
  4. Melt butter over low heat, stir fry garlic until golden, fold in the cooked wings and stir briefly. Serve with lime juice increases appetite (optional).
