Amber Walnut | 琥珀核桃

Amber walnut, delicious snack!

Ingredients | 材料 :

300g  Walnut | 核桃 半斤
pinch of salt | 小許鹽
3/4 tablespoon honey | 蜜糖 3/4湯匙
30~40g  Caster sugar | 砂糖
8g  Dark sesame | 黑芝麻
50g  Water | 水
5g  Unsalted butter (optional) | 無鹽牛油

Steps | 做法 :

  1. Wash walnut in running water, soaked in boiling water with little salt until first boil, drain and dry with paper towel.
  2. Spread evenly on a baking tray, put in middle rack in a preheated oven at 180 degrees and bake for about 15 minutes until golden/brownish.
  3. In a frying pan, put in sugar and water in medium high heat until small bubble, then turn to medium low until big bubble, the color turns to deep brown and sticky enough, add 1/2 tablespoon honey, mix well.
  4. Throw in walnut and butter (optional) and stir quickly with a pair of chopsticks to ensure the surface of walnut is embed with the sweet evenly until totally absorbed. Sprinkle sesame evenly.
  5. Cool on a sheet of baking paper, separate walnut when it is less hot.
  6. Consume quickly, store in a cool dry place.

Tips / 心得 :
  • When sugar content turns to deep brown and sticky, take a chopstick and dip into it, then quickly put the chopstick in cold water, if sugar dissolves in water easily, then it's not yet done. Continue heating the sugar solution in low heat, and test again with a chopstick. Test the chopstick dipped with sugar content into the water, if the sugar is slightly hard and looks like crystal, then the sugar solution is done.
